Maple-Dijon Baked Pork Chops
(with carrots, yellow potatoes & garlic)
Ingredients:
• 4 pork chops
• 1 lb carrots, peeled & cut into chunks
• 1 lb yellow potatoes, quartered
• 3 cloves garlic, sliced
• 2 tbsp oil
• 2 tbsp maple syrup
• 1 tbsp Dijon mustard
• 1 tbsp grainy mustard (optional but good)
• 2 tsp soy sauce
• 1 tbsp rice vinegar or apple cider vinegar
• Salt & pepper
Instructions:

Heat oven to 400°F.

Toss carrots, potatoes, and garlic in 1 tbsp oil, salt & pepper. Spread on a sheet pan.

Season pork chops with salt & pepper; drizzle with remaining oil.

In a small bowl, whisk maple syrup, mustards, soy sauce, vinegar, and garlic.

Nestle pork chops onto tray and brush generously with glaze.

Bake 20–25 minutes, flipping halfway and brushing more glaze.

Roast until pork reaches 145°F and veggies are tender.

Rest 3 minutes before serving.
