Savory Sweet Potato Hash & Egg Bake
Ingredients

Savory sweet potato hash with onions

1 small onion, sliced (or diced)

Sliced mushrooms
-
2–3 cloves garlic, minced

6–8 eggs

Shredded cheddar cheese
-
Salt & black pepper

Oil or butter for the pan
Instructions

Preheat oven to 375°F. Grease an oven-safe skillet or baking dish.

Heat oil or butter over medium heat. Sauté onions and mushrooms until softened and lightly browned. Add garlic and cook 30 seconds.

Add sweet potato hash to the skillet. Cook 5–7 minutes so it warms through and gets a little color.

Spread mixture evenly in the dish.

Whisk eggs with salt and pepper, then pour evenly over the hash.

Sprinkle shredded cheddar on top.

Bake 25–30 minutes, until eggs are set and the top is lightly golden.

Rest 5 minutes before slicing.
