Cheddar Beef Stuffed Potatoes
Hearty, filling, and family-friendly — perfect for a weeknight meal.


Ingredients

  • 3–4 russet potatoes

  • 1 lb ground beef

  • 2 carrots, finely diced or shredded

  • ½ lb cheddar cheese, shredded

  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F.

  2. Wash potatoes, pierce with a fork, and bake 50–60 minutes until tender.

  3. While potatoes bake, brown ground beef in a skillet over medium heat; drain excess fat.

  4. Add carrots to the beef and cook 5–7 minutes until softened. Season with salt and pepper.

  5. Slice baked potatoes open and fluff the inside with a fork.

  6. Fill each potato with the beef and carrot mixture.

  7. Top with shredded cheddar cheese.

  8. Return to oven for 5–10 minutes, until cheese is melted and bubbly.
