Cheddar Beef Stuffed Potatoes
Hearty, filling, and family-friendly — perfect for a weeknight meal.
Ingredients

3–4 russet potatoes

1 lb ground beef

2 carrots, finely diced or shredded

½ lb cheddar cheese, shredded

Salt and pepper to taste
Instructions

Preheat oven to 400°F.

Wash potatoes, pierce with a fork, and bake 50–60 minutes until tender.

While potatoes bake, brown ground beef in a skillet over medium heat; drain excess fat.

Add carrots to the beef and cook 5–7 minutes until softened. Season with salt and pepper.

Slice baked potatoes open and fluff the inside with a fork.

Fill each potato with the beef and carrot mixture.

Top with shredded cheddar cheese.

Return to oven for 5–10 minutes, until cheese is melted and bubbly.
