Ground Beef, Cranberry & Vegetable Skillet

Box Ingredients
- 1 lb ground beef
- 16 oz Mirepoix Mix
- Zucchini, about 2 medium
- Tomatoes, about 2–3
- Dried cranberries
You’ll Need — Not Provided
- 1 tablespoon oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
- Optional: rice, pasta, or bread for serving
Directions
- Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 6–8 minutes. Drain excess grease if needed.
- Add the mirepoix. Add the entire 16 oz container of Mirepoix Mix to the skillet. Cook for 5–7 minutes, stirring occasionally, until the onions, carrots, and celery begin to soften.
- Add the zucchini. Add chopped zucchini and cook for another 4–5 minutes, stirring often, until tender.
- Add the tomatoes & seasoning. Stir in the chopped tomatoes, garlic powder, Italian seasoning, salt, and pepper. Cook for 3–4 minutes.
- Add the cranberries. Stir in the dried cranberries. Cook for 2–3 minutes, until the cranberries are softened and everything is heated through.
- Taste & adjust. Taste and adjust seasoning with additional salt and pepper if needed.
- Serve & enjoy! Serve hot as-is or over rice, pasta, or mashed potatoes if you have them on hand.
