Maple-Mustard Brats Sheet-Pan Dinner
Serves 4
Ingredients
- 4–5 Off the Rails Pork Brats
- About 2 lb delicata squash
- About 1 lb green beans
- 8 oz Olden diced peppers
- 4 bags sliced apples
- 2 Tbsp olive oil
- 3 Tbsp maple syrup
- 2 Tbsp Dijon mustard
- ½ tsp garlic powder
- Salt and black pepper, to taste
- Cooking spray or parchment paper, optional
Directions
1. Preheat oven to 425°F.
Line a large sheet pan with parchment paper or lightly spray with cooking spray.
2. Roast brats and squash.
Toss sliced delicata squash with 1 Tbsp olive oil, salt and pepper. Add to the sheet pan. Nestle brats among the squash. Roast for 20 minutes.
3. Add veggies & glaze.
In a small bowl, whisk together maple syrup, Dijon mustard, remaining 1 Tbsp olive oil, garlic powder, salt and pepper. Remove pan from oven. Add green beans and diced peppers to the pan. Drizzle with maple-mustard glaze and toss to coat.
4. Roast again.
Return pan to oven and roast 15–18 minutes, until brats are cooked through to an internal temperature of 160°F and vegetables are tender and lightly caramelized.
5. Serve.
Serve brats and veggies hot from the pan with sliced apples on the side. Enjoy!

Cook Time: 35–40 minutes
Farm Tip: Delicata squash does not need to be peeled. Slice into half-moons for even roasting.
