Cheesy Ground Beef & Potato Casserole

Ingredients

1 lb ground beef

1 medium onion, diced
-
2 cloves garlic, minced
-
4–5 russet or Yukon Gold potatoes, thinly sliced

2 cups shredded cheddar cheese

1 cup milk or cream
-
1 can cream of mushroom soup
(or cream of cheddar or cream of chicken) -
1 tsp salt
-
½ tsp black pepper
-
½ tsp paprika
-
Butter or oil, for greasing the baking dish

Optional garnish: green onions or parsley
Directions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a skillet over medium heat, cook ground beef and onion until browned and softened. Add garlic and cook 1 minute more. Drain excess grease.

Season the beef with salt, pepper, and paprika. Set aside.

In a small bowl, whisk together the cream soup and milk (or cream) until smooth.

Layer half of the sliced potatoes in the bottom of the baking dish. Top with half of the ground beef mixture, half of the soup mixture, and a layer of cheese.

Repeat the layers with the remaining potatoes, beef, soup mixture, and cheese.

Cover with foil and bake for 50–60 minutes. Remove foil and bake an additional 15–20
