Skillet Sweet Potato & Beef Casserole
Ingredients

1 lb ground beef

2 medium sweet potatoes, peeled & small-cubed

3 carrots, sliced thin

1 onion, diced
-
3 cloves garlic, minced
-
2 tbsp olive oil
-
½ cup beef broth or water
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika (or smoked paprika)

Optional: thyme or Italian seasoning
Instructions

Heat olive oil in a large oven-safe skillet over medium heat.

Add onion and carrots. Cook 5–7 minutes until softened.

Add garlic, cook 30 seconds.

Add ground beef. Break it up and cook until mostly browned.

Stir in sweet potatoes, salt, pepper, paprika, and broth.

Cover tightly, reduce heat to medium-low, and cook 15–20 minutes, stirring once, until sweet potatoes are fork-tender.

Optional casserole finish:

Sprinkle with cheese or breadcrumbs

Broil 2–3 minutes for a baked top
