Recipes for week 4-27-26
BACON POTATO SOUP
Rich, creamy, and made with simple local ingredients.
Serves: 2–4
Time: ~35 minutes
INGREDIENTS
½ lb bacon, diced
1 lb potatoes, peeled and diced
½ cup heavy cream
3 cloves garlic, minced
1 small onion, diced
2 tbsp butter or oil
3–4 cups chicken or vegetable broth
Salt & pepper to taste
INSTRUCTIONS
1. PREP
Peel and dice potatoes.
Dice onion and mince garlic.
2. COOK BACON
In a large pot, cook bacon over medium heat until crispy.
Remove and set aside, leaving a small amount of fat in the pot.
3. BUILD FLAVOR
Add onion and garlic to the pot.
Sauté until soft and fragrant.
4. SIMMER
Add potatoes and broth.
Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are fork-tender.
5. BLEND
Mash for a chunky texture or blend until smooth.
6. FINISH
Stir in cream and cooked bacon.
Season with salt and pepper to taste.
7. SERVE
Serve warm.
