Garlic Onion Smashed Potato Burger

- Russet Potatoes
- Onion
- Garlic

Instructions
- Preheat oven to 425°F.
- Wash and cut potatoes into chunks. Boil in salted water for 12–15 minutes until fork tender.
- Drain potatoes and place on a parchment-lined baking sheet. Use the bottom of a glass or a spatula to gently smash each piece into a ½-inch thick round.
- Drizzle with oil and season with salt and pepper. Roast for 20–25 minutes, flipping halfway, until golden and crispy.
- While potatoes roast, thinly slice onion and mince garlic. Heat a skillet with a little oil over medium heat. Add onion and cook for 10–15 minutes, stirring occasionally, until soft and caramelized. Add garlic in the last 1–2 minutes and cook until fragrant.
- Grill or pan-sear burger patties over medium-high heat for about 4–5 minutes per side, or until cooked to your preference.
- Assemble your burgers: Place a burger patty between two crispy smashed potatoes. Top with caramelized onion and any additional toppings you love.
