Garlic Onion Smashed Potato Burger

  • Russet Potatoes
  • Onion
  • Garlic

  • Oil or butter
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 425°F.
  2. Wash and cut potatoes into chunks. Boil in salted water for 12–15 minutes until fork tender.
  3. Drain potatoes and place on a parchment-lined baking sheet. Use the bottom of a glass or a spatula to gently smash each piece into a ½-inch thick round.
  4. Drizzle with oil and season with salt and pepper. Roast for 20–25 minutes, flipping halfway, until golden and crispy.
  5. While potatoes roast, thinly slice onion and mince garlic. Heat a skillet with a little oil over medium heat. Add onion and cook for 10–15 minutes, stirring occasionally, until soft and caramelized. Add garlic in the last 1–2 minutes and cook until fragrant.
  6. Grill or pan-sear burger patties over medium-high heat for about 4–5 minutes per side, or until cooked to your preference.
  7. Assemble your burgers: Place a burger patty between two crispy smashed potatoes. Top with caramelized onion and any additional toppings you love.
