Ingredients

4 medium sweet potatoes

2 Tbsp olive oil, divided

3 cloves garlic, minced

5 oz fresh spinach (about 5 cups)

½ cup crumbled feta cheese

Salt and black pepper, to taste

Optional: squeeze of lemon juice or 2 Tbsp Greek yogurt for creaminess
Instructions

Bake Potatoes:
Preheat oven to 400°F (200°C). Scrub sweet potatoes, pierce with a fork, and place on a lined baking sheet. Bake 40–45 minutes or until tender. -
Prepare Filling:
While potatoes bake, heat 1 Tbsp olive oil in a skillet over medium heat. Add garlic and sauté 30 seconds.
Add spinach, cook until wilted (2–3 min), and season with salt and pepper. Remove from heat and stir in feta. -
Assemble:
Slice open baked sweet potatoes lengthwise and gently mash the centers with a fork. Drizzle with remaining olive oil.
Spoon the spinach-feta mixture into each potato. -
Finish:
Optionally drizzle with lemon juice or stir in Greek yogurt for a creamy finish. Serve warm.
