This Weeks Recipe 11-17-25

Serves: 4  Prep Time: 10 min  Cook Time: 45 min  Total: ~55 min

Ingredients

  • 4 medium sweet potatoes

  • 2 Tbsp olive oil, divided

  • 3 cloves garlic, minced

  • 5 oz fresh spinach (about 5 cups)

  • ½ cup crumbled feta cheese

  • Salt and black pepper, to taste

  • Optional: squeeze of lemon juice or 2 Tbsp Greek yogurt for creaminess

Instructions

  1. Bake Potatoes:
    Preheat oven to 400°F (200°C). Scrub sweet potatoes, pierce with a fork, and place on a lined baking sheet. Bake 40–45 minutes or until tender.

  2. Prepare Filling:
    While potatoes bake, heat 1 Tbsp olive oil in a skillet over medium heat. Add garlic and sauté 30 seconds.
    Add spinach, cook until wilted (2–3 min), and season with salt and pepper. Remove from heat and stir in feta.

  3. Assemble:
    Slice open baked sweet potatoes lengthwise and gently mash the centers with a fork. Drizzle with remaining olive oil.
    Spoon the spinach-feta mixture into each potato.

  4. Finish:
    Optionally drizzle with lemon juice or stir in Greek yogurt for a creamy finish. Serve warm.

Tips

  • Add roasted chickpeas or shredded chicken for extra protein.

  • Sprinkle chili flakes or drizzle honey for a sweet-savory twist.
