Ground Pork, Apple & Potato Skillet
This one-pan meal is quick to prepare and makes a satisfying and complete dinner.
INGREDIENTS
• 1 lb ground pork
• 2 tbsp olive oil (divided)
• 1 medium yellow onion, chopped
• 2 medium carrots, diced
• 2 stalks celery, sliced
• 1 lb Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
• 1 large apple (Granny Smith or Honeycrisp work well), peeled, cored, and diced
• 2 cloves garlic, minced
• 1/2 cup chicken or beef broth
• 1 tbsp all-purpose flour
• 1 tsp dried thyme (or 1 tbsp fresh)
• Salt and black pepper to taste
• Fresh parsley for garnish (optional)
INSTRUCTIONS
Brown the pork: Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the ground pork and cook, breaking it apart with a spoon, until it is no longer pink and browned, about 8–10 minutes.
Cook until tender: Bring the mixture to a simmer. Reduce the heat to low, cover the skillet, and cook for 15–20 minutes, or until the potatoes are fork-tender and the flavors have combined.
Serve: Taste and adjust seasoning as needed. Garnish with fresh parsley if desired.
