Hearty Beef & Veggie Soup

Serves: 4–6


Ingredients

  • 1 lb ground beef
  • Cauliflower florets
  • Broccoli florets
  • 2–3 carrots (sliced)
  • 1 onion (diced)
  • 3–4 cloves garlic (minced)
  • 6–8 cups water or broth
  • 1–2 tbsp oil or butter
  • Salt & pepper

Instructions

  1. Brown the beef
    In a large pot, cook ground beef until browned.
    Season with salt + pepper. Remove excess grease if needed.
  2. Build flavor (don’t skip this)
    Add oil/butter if needed.
    Toss in onion + garlic. Cook 3–5 minutes until soft and fragrant.
  3. Add carrots first
    Stir in carrots and cook another 3–4 minutes (they take longer than the rest).
  4. Add liquid
    Pour in water or broth. Bring to a boil.
  5. Simmer
    Add cauliflower + broccoli.
    Reduce heat and simmer 20–25 minutes until everything is tender.
  6. Final seasoning
    Taste it. Add more salt + pepper as needed.
