Hearty Beef & Veggie Soup
Serves: 4–6
Ingredients
- 1 lb ground beef
- Cauliflower florets
- Broccoli florets
- 2–3 carrots (sliced)
- 1 onion (diced)
- 3–4 cloves garlic (minced)
- 6–8 cups water or broth
- 1–2 tbsp oil or butter
- Salt & pepper
Instructions

Brown the beef
In a large pot, cook ground beef until browned.
Season with salt + pepper. Remove excess grease if needed. -
Build flavor (don’t skip this)
Add oil/butter if needed.
Toss in onion + garlic. Cook 3–5 minutes until soft and fragrant. -
Add carrots first
Stir in carrots and cook another 3–4 minutes (they take longer than the rest). -
Add liquid
Pour in water or broth. Bring to a boil. -
Simmer
Add cauliflower + broccoli.
Reduce heat and simmer 20–25 minutes until everything is tender. -
Final seasoning
Taste it. Add more salt + pepper as needed.
